Carrying forward the legacy of its original owner, Agave remains a family-run kitchen where tradition, loyalty, and from-scratch cooking keep both memory and flavor alive.

By 2022, Tony became the sole owner. Since then, Agave has been fully family-run. His brother Alejandro, known as Alex, works as the sous chef. His wife Rebeca supports the heart of the operation. Her daughter Litzy and his brothers-in-law Damian and Juanito are part of the daily rhythm. It is less of a staff and more of a table where everyone has a seat.
And the food? Everything is made from scratch. The tortilla chips are fried in vegan vegetable oil. The salsas are built layer by layer. Nothing is rushed or industrial!
In the heart of Ashland lives Agave, a kitchen built on loyalty, memory, and the kind of recipes that don’t come from a freezer but from hands that have repeated the same movements for years.
The restaurant was originally owned by John Hinkle. Chef Tony Angeles began working there in 2005. When Hinkle passed away in 2014, Tony and his partner made a decision that says everything about who they are. They did not let the flame go out. They took over the restaurant to honor him and kept the doors open in his memory.
